The great talent of the Côte de Nuits whose reputation has exploded in just a few years! We are delighted to have met Pierre-Olivier in time, knowing that today the wines are highly sought after and allocated within a few days. This meteoric success, however, is not a matter of chance. The origin of the domain began with the union of two childhood friends to create Domaine Moron-Garcia in 2016. A haute-couture wine trade centered around their hometown: Nuits Saint-Georges. Although this appellation is perceived to deliver classic and traditional wines, the two men want to give it a big boost with wines combining purity and aromatic finesse, to contradict the stereotypical image of Nuits St Georges, a manly, powerful and earthy wine. In 2020, Pierre-Olivier took sole direction of the domain, convinced (rightly so!) that his viticulture and winemaking model can stand the test of time. To achieve this, he chose to directly exploit several parcels on high-quality terroirs like "les herbues" in Nuits. All the grapes come from organic viticulture, with Pierre-Olivier even pushing the approach further by developing biodiversity and polyculture on his plots. All grapes are rigorously sorted in the vineyard and at the winery, then vinified in the domain's vat room.

Pierre-Olivier is very meticulous, for him, no compromise should be made and everything must be done to crush grapes in a perfect sanitary condition, even if it means harvesting over 3 weeks where a "classic" domain would finish in 10 days. He has devised a battle plan worthy of a Swiss watchmaker: the grapes spend a night in a cool room to slow down fermentation, then are sorted for an entire morning (!!!).

A major originality here: the use of the berry-by-berry technique on all red cuvées (no other domain does this!). All green parts of the cluster ("the raffles") are meticulously cut with scissors to leave the pedicel intact on the grape berry. Thus, the grape berries are crushed without any juice flowing. Everything is vinified using the layering technique: destemmed grapes, whole bunches, and grapes "berry by berry" for stunning aromatic complexity! The wines are vinified without sulfur and aged in barrels (few new barrels) for 1 year. The result in the glass is amazing, the wines have a fruit brightness like nowhere else and right from their early days, they go beyond primary aromas to taste unique, complex, and flavorful wines.
